I am often described as a wine enthusiast – the more wine I drink, the more enthusiastic I become.  And being passionate about the wonderous world of wine, my heart still misses a beat when I encounter something new to tantalise the taste buds.  New to me until now, Corvina is a red grape variety that is a rarity in Australia and originally hails from the Veneto region in Italy.  I’ve not come across Corvina before and to have one produced in our region is a delight.  The subject of this week’s “swirl” – the Whitton Farm Corvina 2019 – is a fantastic combination of Italian inspiration and local cool climate wine culture.

The wares from Whitton Farm are “born out of a passion for Italian wines” and offer the wine drinker a thoroughly enjoyable, food-friendly tasting experience.

This wine is a light and bright crimson ruby-red colour in the glass.  A swirl reveals aromas of ripe red cherries, macerated strawberries and blood plums with a hint of crushed almonds.  The palate is firm and tightly structured with tart, red cherry and plum flavours along with a savoury edge from the well-integrated acidity and tannins, leading to a food-friendly finish.

We enjoyed our bottle with pan-fried breast of chicken with figs and prosciutto in a red wine jus with wood-fired oven-roasted pesto vegetables – a truly great combination.  This would also be just the ticket for chargrilled lamb cutlets, sprinkled with sea salt, rosemary and olive oil, or a spicy Italian sausage-sauced pasta dish.  I sourced my bottle from the great local wine selection at Thyme to Taste in Yass, but you can also buy online for $35 per bottle here: https://www.whittonfarm.com.au/
